What would be awesome is, to set a deputy. So when someone go on vacation all task would be set to the deputy. When vacation / out of office Ends, the tasks swap back to so original assingee

About a year ago, I created a List for my team with a Form for entering what we call "Placeholders." We use this form to enter any PTO, Out of Office, company holidays, or any other day/time that should be considered when scheduling other projects and tasks.
The Form creates a Task that remains open until the time/date passes and sets the Task Type and status to "Placeholder." If the placeholder is for a person's availability, then the placeholder is assigned to the person with a time estimate so that it shows up in Workload view.
This List is in a folder with our main project lists, which allows us to build Timeline and Gantt views at the folder level for scheduling projects/tasks in advance around those "placeholder" days. We do have the placeholders added to the actual, main project list, but we use custom fields and groups to hide them from every view except Gantt and Timeline so they don't clutter the task list itself.
When a task is created through the form, we have several automations that run to move things around, with the intent being to just simply use the form and let it be. I've attached a couple screenshots of the Form and the Automations that are in use.
