Checklist Items with Status

I've seen similar requests, but more complex ones. I need a simpler and specific thing.
Currently, the checklists' items have two default status: To Do (after you create it) and Completed (after you check it).
I need a status "Doing/In Progress", between those two, just as the Smart checklist plugin in JIRA.
Custom status, as other person requested, would be really useful. But I consider my request a first version to this more complex path.

We would love something like this. We are looking to simplify the way we have our tasks laid out and using checklist items for parts of a deliverable (ex. written content, design layout, etc. for a print piece) but we need each of those to still be able to run through our statuses. Having these items as checklists instead of subtasks helps keep everything streamlined. We don't need each of those parts of our process to have their own descriptions, comments, attachments, etc. we just need the parent task to have all of that info in one place.
