Add ability to set a default AI model for ClickUp Brain to use.

I am generally getting better results for my creative work from using Gemini or Claude models and am wasting too much time manually selecting for ClickUp Brain to use these models each time.
In addition, I have ethical issues with using OpenAI/ChatGPT now and want to reduce and if possible completely remove any reliance I have on it.
